As per usual, I offer a lighter serving option that consists of cookie crumbs and a drizzle of maple syrup. Buuhhtt…. Because of dessert aspirations, I couldn’t help but slather some half-in ice cream.

These were ideal for the kids’ after-school snack and for me to enjoy while watching The Proposal for the zillionth time in the middle of the afternoon.

To begin with, prepare your cookie crumb. a combination of almond flour, butter, sugar, and almond meal.

Bake until the cookies are golden, crisp, and crunchy and the kitchen is filled with the distinct aroma of buttery cookies! Just be mindful not to consume it all before it has had a chance to cool.

Pay attention to your luscious and sweet peaches as your mixture transforms into a lovely cookie crumb. For grilling, cut them in half and remove the pits.

Before grilling, spread maple syrup evenly over each half to give them a glaze-like appearance that will caramelize when they are done.

AFTER that, sprinkle with a little additional syrup for a finishing touch of caramel!

The decision is whether to top it with ice cream or not. The choice is yours.

INGREDIENTS

CRUMBS:

  • 3/4 cup all-purpose flour
  • 1/4 cup granulated sugar (or a granulated sweetener that measures 1:1 with sugar)
  • 3 tablespoons toasted almond meal
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3 tablespoons light butter, melted and cooled slightly
  • 1 teaspoon pure vanilla extract

PEACHES:

  • 6 large firm-ripe peaches, halved and pitted
  • 1 1/2 tablespoons maple syrup (sugar-free maple syrup can be used)

INSTRUCTIONS

  1. As for Crumbs: Set the oven to 175 C or 350 F. Use baking (parchment) paper to line a baking sheet or pan. Combine the flour, sugar, almond meal, baking powder, and salt in a medium bowl. Using your fingertips, combine the vanilla and melted butter until fine crumbs form.
  2. Spread out and bake for 10 minutes on a preheated baking sheet. Rotate the baking sheet to distribute the crumbs, and bake for an additional 8 minutes, or until the crumbs are golden and crisp. Let the food reach room temperature.
  3. Peaches Grilled: Preheat grill or grill pan to medium-low heat. To avoid sticking, lightly lubricate with a small amount of butter. Each peach half should have two teaspoons of syrup brushed on it. Place cut-side down on the grill for 10 minutes, or until the peaches are nicely grilled and caramelized.
  4. When ready to serve, add a little extra maple syrup, a scoop of ice cream, and some cookie crumbs on top.

NOTES

  • Any leftover cookie crumbs can be put in a glass jar or another airtight container and kept for a week at room temperature.
