Storage Advice for Scones

Scones can be frozen before baking, so you can always enjoy them warm out of the oven!

  • Prepare scones as specified and cut them into wedges to freeze before baking. On a baking sheet, freeze until solid. Once solid, store for up to 3 months in a sealed freezer bag.
  • When baking from frozen, take the scones out of the freezer for around 20 minutes (while the oven preheats). The oven should be preheated to 400°F. Bake for 18 to 22 minutes, or until thoroughly cooked.

Ingredients

  • 2 ½ cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • ⅛ teaspoon cayenne pepper
  • ⅓ cup cold butter cut into pieces
  • 1 ¼ cup Cabot Seriously Sharp Cheddar shredded
  • 2 eggs beaten
  • ¾ cup heavy cream
  • milk to brush the top of the scone

chive butter (optional)

  • 2 tablespoons melted salted butter
  • 1 tablespoon chopped fresh chives or parsley
  • ¼ teaspoon garlic powder

  1. Set the oven to 400 °F.
  2. When the mixture resembles coarse crumbs, combine the dry ingredients in a bowl and, using a pastry cutter, cut in the butter. Cheese should be added, then combined.
  3. Cream and eggs should be combined. Just until a dough forms, combine the egg mixture with the flour mixture.
  4. Knead dough by folding and gently pressing dough for 10 to 12 strokes, or until nearly smooth, on a lightly dusted surface. Cut the 8-inch circle of dough into 8 wedges.
  5. On an oiled baking sheet, space the wedges 1 inch apart. Use milk to brush.
    until golden, 18 to 22 minutes of baking. Scones should be taken from the baking pan. Allow cooling a bit.
  6. Mix the ingredients for the chive butter. Serve with a brush over the warm scones.

Notes

Scones can be stored for about two days at room temperature in a zippered bag or an airtight container. To help them stay fresher longer, include a piece of bread in the bag with them to absorb moisture.
