Are you ready for the next no-cook lunch box installment?

The Hummus Lunch Box is a classic that I’m sure many of you have tried, but it deserves its own spot in the series because it’s versatile and always a crowd-pleaser.

I’ve mentioned a few various ways you can eat or serve this lunch box below, so even if you’ve already made it, don’t forget to look at the other options!

Hummus, kalamata olives, cucumber, grape tomatoes, and pita bread (of course).

This lunch box appeals to me because of its simplicity, the fact that it requires very little preparation, and the fact that I enjoy “snacky” finger foods.

I merely had to slice the cucumber and drain the jar of olives for the preparation! I used store-bought hummus this time for the sake of convenience and since ALDI sells very cheap hummus.

Try my homemade hummus recipe if you want to make your own hummus or experiment with different hummus flavors (four flavors).

OPTIONS FOR SERVING

As I indicated in the introduction, you may eat this lunch box in a variety of ways. The obvious way to eat it is in a “snacky” manner, with a little bit of this, a little bit of that, and so on. However, there are a few alternative options:

  • Make a pita sandwich with it. Instead of cutting your pita bread into triangles as I did in my images, leave it cut in half and spread hummus inside, then add cucumber slices, olives, and tomatoes and eat it like a sandwich when you sit down for lunch!
  • Make a salad out of it. Pack a second bowl of mixed greens, then top it with the vegetables and hummus when you sit down for lunch and eat it like a giant sandwich! You might wish to serve some dressing on the side as well (I suggest a vinaigrette, like Greek dressing, Italian, or Caesar dressing).

INGREDIENT SUBSTITUTIONS

This hummus lunch box, like the rest of the no-cook lunch boxes in this series, is extremely adaptable. If you don’t like any of the ingredients I used, here are some alternatives:

  • Pita chips or pretzel crackers in place of the pita bread
  • Feta cheese cubes
  • Celery or carrot sticks
  • Bell peppers
  • Sliced grilled chicken
  • Marinated white beans

HOW LONG IS THE LUNCH BOX GOOD FOR?

This lunch box keeps up well to refrigeration, so it should last around 5 days in the fridge, depending on the freshness of your ingredients and the conditions inside your refrigerator when you make the boxes.

WHAT TYPES OF CONTAINS DO YOU USE?

  1. Cut the pita bread into triangles and slice the cucumber.
  2. In four separate containers, divide the hummus, cucumber, tomatoes, olives, and pita triangles. Keep in the refrigerator for up to five days.
