Pasta nirvana is cavatappi! The Italian word for noodles is cavatappi, which translates to “corkscrew,” and because of their corkscrew form and ridges, they cling to the thick, creamy sauce.

This dish for spaghetti will win your heart! With only 8 straightforward, simple ingredients (plus salt and pepper), it comes together quickly. Here is a quick list of what you will require:

Cavatappi pasta

If cavatappi are unavailable, pick a pasta shape that will accommodate the cheesy cream sauce. Fusilli, penne, and rigatoni are excellent options.
Butter. for preparing the garlic and enhancing the sauce’s flavor. Utilize dairy-free as needed.

Garlic.

Essential to any pasta meal. Fresh garlic, not the type from a jar, is highly advised.

Flour.

Just a tiny bit is required to thicken the cream sauce.

Broth.

I use vegetable broth, but you may use anything you have.

Milk.

For this dish, any favorite milk is OK. Even plant-based milk can be used; just make sure that it is plain and flavorless.
Italian spices.

You just need this one basic seasoning since we want the flavor of the parmesan cheese to stand out.

Parmesan Cheese, Grated.

Freshly grated parmesan Parmesan is my favorite! The best blocks of parmesan cheese may be found in the specialty cheese section of most supermarkets.

If you want to make this dish vegan-friendly, you may use my vegan parmesan cheese or fantastic parmesan cheese that melts well from Violife.

Pepper and salt.

To meld every flavor together.

This creamy pasta recipe is incredibly simple to make! Here is a brief description of the procedure; however, the recipe card is located at the bottom of the post and has detailed directions.

Cook pasta.

Start a pot of salted, boiled water, and cook the pasta per the directions on the package. Drain the cooked food, then set it aside.

Assemble the Sauce.

Garlic should be added to melted butter and cooked for two minutes while stirring often. After adding the flour, simmer for one minute.

Add the cheese, salt, pepper, milk, Italian spice, and broth. Stir thoroughly, then bring to a simmer. Cook while frequently tossing until the cheese has melted and the sauce has thickened.

Add spaghetti and cream sauce together.

To thoroughly coat, stir the cooked, drained pasta into the sauce.

Enjoy! Pasta should be served with steamed broccoli florets and a colorful garnish of fresh parsley.

Options for modifying this pasta dish:

Although the pasta is great as is, feel free to make adjustments to suit your family’s tastes and the ingredients you have on hand.

Pasta.

Although this recipe calls for cavatappi, you can substitute whatever short pasta you like. Fusilli, rigatoni, or penne are excellent alternatives.
Remove the gluten. Simply use your preferred gluten-free pasta.

Veganize it.

Make use of vegan parmesan cheese, vegetable broth, and dairy-free butter.

Include protein.

You can also add cooked Italian sausage, cooked shrimp, shredded rotisserie chicken, or cooked chicken breast to the pasta.

Add vegetables.

This recipe would taste incredibly delicious with chopped roasted bell pepper and chopped artichokes, in my opinion. Sautéed vegetables like mushrooms, zucchini, broccoli, or eggplant are more options.

Being a purist, I enjoy my pasta with just the cream sauce, noodles, and optional parsley. However, there are a plethora of methods to adorn a cavatappi pasta dish. Several ideas are:

  • Tofu with a vegan parmesan crust
  • shredded bacon
  • rotisserie, roasted, or grilled chicken
  • new herbs
  • Broccoli

Food leftovers storage

Pasta made of creamy cavatappi can be kept in the fridge for three to four days. Reheat gently in the microwave while misting it with some water, broth, or milk to prevent drying out.

  • 1 pound cavatappi
  • 4 tablespoons of butter (dairy free as desired)
  • 4 cloves of finely minced garlic
  • 3 tablespoons of flour
  • 1 cup of broth (I use veggie broth but whatever you have will work)
  • 1 cup milk of choice (plain milk or dairy-free works)
  • 2 teaspoons of Italian seasoning
  • 1 cup of grated parmesan cheese (violate makes a great parmesan cheese that melts nicely but I also have a vegan parmesan recipe HERE*)
  • Salt + pepper to taste
  • Optional for serving: 2 heaping cups of steamed broccoli florets

Instructions

  1. The pasta should be prepared as directed on the packaging.
  2. Melt the butter in a sizable skillet or saucepan over medium heat. Once melted, stir often for two minutes while cooking the garlic.
  3. After adding the flour, simmer for one minute. Add the cheese, milk, Italian spice, broth, and pepper to the mixture. Stir thoroughly then heat to a simmer.
  4. Cook the cheese until completely melted and mixed with the sauce for 2 minutes, stirring frequently.
  5. Drain the pasta, then add it to the sauce in the skillet and toss to evenly coat. Serve right away and SAVOR!
