Zebra Cake Pancakes are now ready. The magnificent result of a steaming stack of Zebra cake. Who’s up for cake for breakfast?
INGREDIENTS
- 2 cups self-raising flour* (See Notes)
- 2 tablespoons sugar
- 2 teaspoons baking powder** (See Notes)
- pinch of salt
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 3/4 cups skim milk (or unsweetened almond milk)
- 2 tablespoons reduced-fat butter, melted
- 2 tablespoons unsweetened cocoa powder
- 2 (extra) tablespoons of milk
INSTRUCTIONS
- In a bowl, mash together the flour, sugar, baking soda, and salt. Combine by whisking. Add the egg, vanilla, and milk to the center and create a well there. Before adding the wet ingredients to the dry ingredients, whisk the wet ingredients first. When the batter is smooth and creamy, add the melted butter and stir once more.
- The cocoa powder should be added to half of the mixture, then whisked until dissolved. If the batter is too thick, add 2 tablespoons more milk.
- Pour roughly two tablespoons of the simple mixture onto the center of a preheated nonstick skillet after lightly greasing it with butter or cooking oil spray. Put two teaspoons of the chocolate batter on top right away. Do this repeatedly until you have five or six rings (the more batter you use, the bigger your pancakes will grow). In the pan, there will be alternating rings of batter (it doesn’t have to be tidy)!
- Cook until bubbles appear on the surface, then turn and finish cooking (as you would normal pancakes). Continue until all of the batters have been used (grease in between every second or third pancake, depending on the quality of your pan).
- Serve with whatever you like—maple syrup, ice cream, fruit, berries, melted chocolate, etc.
NOTES
*Use self-rising flour in place of all-purpose or plain flour. **If using plain or all-purpose flour, add 1 tablespoon of baking powder.
