  • To marinate the water chestnuts, combine them with the soy sauce in a big plastic sandwich bag. Allow them to sit for about 30 minutes, tossing and massaging the bag occasionally to coat them.
  • Preheat the oven to 400 degrees Fahrenheit. On top of a baking or cooking sheet, place a rack.
  • Wrap a strip of bacon around each water chestnut and secure with a toothpick. Arrange the bacon-wrapped chestnuts on the rack with the seams facing down. Crisp the bacon in the oven.
  • Combine all of the sauce ingredients while the bacon is cooking. Remove the water chestnuts from the oven after they have finished cooking and coat them with the sauce. Return to the oven and serve hot!

Chef’s Advice

  • This recipe calls for canned water chestnuts, but you can use fresh ones if you want. Cut the top and bottom off your freshwater chestnuts before peeling them with a vegetable peeler. Rinse them thoroughly in cold water.
  • This dish is ideal for preparation ahead of time and baking right before guests arrive. Allow the water chestnuts to marinade, then wrap them in bacon and store in the refrigerator until ready to use. The sauce can also be made ahead of time!
