Milk – I used whole milk in this recipe, but any milk will suffice. My personal favorite is whole milk, which yields an ultra-rich and cozy gravy. I’ve also tried this recipe using 2% milk and it turned out fantastic!

- Reduce the heat to medium-low if your skillet becomes too hot after cooking the bacon. Before adding the flour and milk, it’s best to keep the temperature low. If the pan is excessively hot, the flour may burn and separate from the milk, ruining your bacon gravy.
- You can use as much or as little milk as you choose! Less milk will result in a thick gravy, while more will help thin it out. I like to start with one cup of milk and progressively add more until the proper consistency is achieved.
- Save the extracted bacon grease for later use in this recipe! Let’s say you’re making bacon on Sunday morning, but you don’t want to prepare gravy until Wednesday night. Simply place 1/4 cup of bacon fat in an airtight jar in the refrigerator until ready to use. The fat will freeze in the refrigerator but melt as soon as it comes into contact with the hot skillet.

- In a large skillet over medium heat, cook bacon until crispy.
- Remove all but 14 tablespoons of rendered bacon fat from the skillet.
- Stir the flour into the fat gradually, then add one cup of milk. On medium-low heat, whisk frequently until the sauce thickens. If you want a thinner gravy, add 1 to 2 cups more milk.
