White Chocolate Parfaits
White Chocolate Berry Parfaits are a lovely and tasty summer dessert that can be easily made for any occasion. A rich, creamy white chocolate layer combined with fresh berries makes the ideal summer treat!

Ingredients
cream layer
- 1 cup whipping cream
- 2 oz white chocolate
- 1 package of white chocolate pudding
- 2 cups milk
berries
- 1-pint strawberries sliced
- ½ cup sugar
- 2 cups blueberries
cake
- 1 angel food cake prepared, cut into small squares, store-bought or homemade strawberry sauce (optional)
- reserved strawberry juice
- cornstarch
Instructions
- Combine sugar and strawberry slices. Allow it to sit for at least an hour at room temperature to let juices flow. Blueberries should be cleaned and laid aside.

- Whipping cream and chocolate should be heated in a small saucepan over low heat until the chocolate is melted. Keep in the fridge until VERY cold. The whipping cream should be very cold before being beaten vigorously until peaks form.
- As directed on the packaging, combine milk and pudding. Whip cream into the pudding mixture, then gently fold it in.

- Strawberries should be drained, with juice saved for sauce if desired. Layer cake, strawberries, cream mixture, blueberries, strawberries, cream mixture, and blueberries in each container.
- 2 hours or overnight in the refrigerator before serving.
strawberry ketchup (optional)
- Cornstarch should be combined with the cool, saved strawberry juice in a ratio of around 1 teaspoon to 1/2 cup juice.
- Stirring continuously, bring to a boil over medium heat, and allow to boil for one minute. Remove from heat and allow to fully cool.
