It’s as simple as 1, 2, and 3 to make this vibrant meal, which combines red, yellow, and green bell peppers.

  1. Drain the fat after browning the ground beef, onion, and garlic in a sizable skillet.
  2. Bring the remaining ingredients to a boil before adding (see recipe below).
  3. Once the rice is tender, lower the heat and cover the pot.

When the casserole is done, sprinkle cheese on top, put the cover back on, and let the cheese melt. Serve!

Different Versions of This Casserole

  • Low Carb: To make a low-carb entrée, replace the rice with cauliflower rice.
  • Meat: Use ground chicken, turkey, or even sausage in place of ground beef.
  • Italian seasoning is used in this dish, but you can substitute your preferred seasoning or even omit it and use taco seasoning instead.
  • Peppers: For this dish, any color combination is OK.

  • 1 pound of ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 2-2 ¼ cups bell pepper red, green, and/or yellow, diced
  • 14 ½ ounces tomatoes diced, undrained
  • 2 teaspoons Italian seasoning
  • 2 cups beef broth
  • 1 ½ cups tomato sauce
  • 3 tablespoons tomato paste
  • 1 cup basmati rice uncooked
  • 1 cup mozzarella cheese shredded
  • salt & pepper to taste

  1. Until no pink is visible, brown meat with onion and garlic. Eliminate extra fat.
  2. Rice, peppers, seasonings, beef broth, tomatoes, tomato sauce, and tomato paste should all be added.
  3. The mixture should be brought to a boil before being covered and simmered. Cook the rice for 25 minutes or until it is soft. (If necessary, add more beef broth.)
  4. When the rice is tender, sprinkle cheese over top and place a lid over it to melt it. Broil for 2-3 minutes, if desired.
