These Cinnamon Roll Rice Krispie Treats are now my new favorite treat! I needed to find a way to mix cinnamon buns and Rice Krispie Treats, so I came up with these.
I enjoy giving timeless pieces a fresh, intriguing makeover. I have to confess that I enjoy these(cinnamon roll rice Krispie treats) on par with cinnamon rolls (which is saying something because a fresh warm cinnamon roll is one of my favorite foods).
The amazing thing about these is that they have the same flavor as a cinnamon roll but can be prepared in a tenth of the time.
Additionally, they are much lower in calories than a cinnamon roll. These can be prepared in the two distinct methods shown in the image or spread out into a single layer and cut into squares.
In any case, they were wonderful (I ate three right away, oops =)! Even without the frosting, they are fantastic.
If you enjoy nuts in your cinnamon rolls, these would also be tasty with chopped pecans put on top or folded in with the cereal.

Cinnamon Roll Rice Krispie Treats

Ingredients for Cinnamon Roll Rice Krispie Treats
- 1/4 cup butter
- 1/8 teaspoon of salt
- Unsulfured molasses, 2 teaspoons
- 2/tsp. of cinnamon
- a single bag of tiny marshmallows (10.5 oz).
- Vanilla extract, 1 teaspoon
- Rice Krispies cereal, 6 cups
- Cream cheese frosting recipe (recipe follows)
Buttercream Frosting
- 14 cup softened butter
- 4 ounces of softened cream cheese
- Vanilla extract, 1/2 tsp.
- 2 cups of granulated sugar
Instructions for Cinnamon Roll Rice Krispie Treats
- Prepare a 9×13 dish with butter. Butter should be melted in a sizable saucepan over low heat. Add cinnamon, molasses, and salt after that. Add the marshmallows and keep stirring until they are completely melted. Add vanilla after removing it from the heat. Rice Krispies cereal should be mixed in and coated evenly. Fill the buttered dish with the Rice Krispie Treat mixture. Using a buttered spatula, spread the mixture evenly in the pan. After several minutes of cooling, slice while still slightly warm. Round the corners of the squares, you’ve cut out with your hands by gently pressing them together. After letting them cool, top the Cinnamon Roll Rice Krispie Treats with Cream Cheese Frosting. Optional: Lightly sprinkle cinnamon over the tops.
- As an alternative, after incorporating the cereal, just spread the Rice Krispie Treats mixture into a buttered pan. After allowing them to cool, use a butter knife or icing spatula to evenly spread cream cheese frosting over the top. Square them up.
Buttercream Frosting
- Whip butter and cream cheese in a mixing bowl with an electric mixer until frothy. Add vanilla and stir. Powdered sugar should be added gradually and mixed until smooth and fluffy.
Notes
If you don’t like a lot of frosting then half the quantity of Cream Cheese Frosting is adequate.
