Brioche is put in the category of Viennoiserie. This means that it is something between a bread and a pastry. This is because besides the ingredients of bread of wheat flour, salt, yeast, and oil, it has added ingredients such as butter, milk, eggs, cream, and sugar. Hence it has a rich sweet taste. It has a brown or golden crust that bakers accentuate with egg wash after proofing.

The ratio of flour to butter varies and this determines its cost. The richer varieties that are expensive have a ratio of 3:2 while the cheaper ones have it at 4:1.
