INGREDIENTS

Smashed Potatoes:

  • 2 pounds | 1 kg potatoes (Yukon Gold or Carisma)
  • A light spray of olive oil
  • Kosher Salt and Black Pepper to taste
  • 2 teaspoons garlic or onion powder
  • 1 cup shredded mozzarella Cheese
  • 1/2 cup diced bacon
  • 1 tablespoon finely chopped chives

Avocado Crema:

  • 1 ripe avocado, pitted and mashed
  • 1/2 cup sour cream (or plain, greek yogurt)
  • 1 teaspoon minced garlic
  • salt to season

INSTRUCTIONS

  1. Set your oven’s broiler (or grill) to the highest heat setting.
  2. In a big pot of salted water, add potatoes. Bring to a boil; simmer for 30-35 minutes with a lid on, or until the food is just fork-tender. Good drainage
  3. Spray cooking oil on a large baking sheet or pan to lightly coat it. Potatoes should be arranged on the sheet and LIGHTLY flattened in one piece with a potato masher (not too hard or they will end up mashed).
  4. Potatoes should be lightly sprayed with olive oil spray before being seasoned with salt, pepper, and 1/4 teaspoon each of garlic or onion powder.
  5. Until they are brown and crispy, broil (or grill) them (about 15 minutes).
  6. Fry the diced bacon until it just starts to crisp up; drain grease on a sheet of paper towel, and leave aside while the potatoes are broiling.
  7. After taking the potatoes out of the oven, cover them with the mozzarella cheese and bacon, and put them back in the oven to melt the cheese.
  8. Add a little extra salt to the dish and sprinkle chives on top. Serve the Avocado Crema right away.
