Use a meat thermometer to cook a spiral ham to a temperature of 140°F while being careful not to overcook it. I normally take it out when the temperature reaches 135°F, watching the thermometer to make sure it reaches 140°F.

Depending on size, spiral hams should be cooked for 13–16 minutes per pound at 250°F, uncovered. Remove your ham from the oven if it is done ahead of time and let it cool slightly so that it doesn’t continue to cook.

Cover with foil after it has slightly cooled, then wait to cut until ready to serve.

Instructions

  1. Set the oven to 250°F.
  2. Remove the ham from the container, and if it has a tiny plastic disk attached to the underside of the bone, take it off and throw it away.
  3. Ham should be placed cut side down in a shallow roasting pan.
  4. Bake the ham until it reaches 140°F, about 13 to 16 minutes per pound.
  5. If using, add the ham glaze in the final 20 minutes of cooking.
  6. Before cutting, take the ham out of the oven and let it rest for at least 15 minutes. If desired, pour juices over the ham just before serving.

Notes

For the glaze, combine your preferred warm spices with 2/3 cup brown sugar, 1/4 cup juice (orange or pineapple work well), and 2 teaspoons dijon mustard.
