When I opened the CSA box we received last week and discovered jumbles of cherry tomatoes in a variety of colors, I immediately knew that I needed to create this cucumber tomato salad.

There are times when I plan recipes many months in advance. Thanksgiving dinner will consist of green bean casserole, while Easter will have deviled eggs.

On the other hand, the recipe for the cucumber tomato salad was something I couldn’t plan for.

It came about as a result of those specific tomatoes as well as my desire for a tasty summer salad that would highlight the tomatoes to their full potential.

Since then, this recipe for cucumber tomato salad has rapidly risen to the top of the list of favorites in our home. It is reminiscent of a hybrid between a traditional Greek salad and a Panzanella because it is prepared with grilled croutons and halloumi cheese.

The fact that this cucumber tomato salad is so simple to put together is one of the aspects that I appreciate the most about it.

Even though it’s made with only a few simple ingredients, you’ll be able to enjoy a wide variety of sophisticated tastes and textures. In it you’ll find the following:

  • Cherry tomatoes – When preparing this salad, use the very best cherry tomatoes that you can locate. You should search for a variety of shapes, colors, and sizes, whether you are shopping at a farmers market or a grocery store because it tastes best when there is a lot of variety in all of these aspects.
  • Cucumbers from Persia — When I make this dish, I love to use miniature cucumbers from Persia.   • Croutons are easy to make at home, so never buy them! It is surprisingly simple to prepare as long as you have nice crusty bread, olive oil, and salt available.
  • Basil – In a tomato salad, you can never go wrong by including some fresh basil, can you?
  • The Greek salad dressing is the finishing touch that brings everything together! My straightforward recipe calls for a flavorful combination of olive oil, red wine vinegar, Dijon mustard, oregano, garlic, and various seasonings along with salt and pepper.

Serving Suggestions

This cucumber tomato salad is one of my favorites to have for lunch on its own. Because it has robust halloumi and croutons, it can keep me satisfied until supper time without any difficulty.

On the other hand, it makes a fantastic summertime side dish. Serve it with stuffed zucchini or stuffed peppers, the traditional fare for a barbecue such as vegetarian burgers or black bean burgers, homemade pizza, or any one of these summer pasta recipes:

During the warm summer months, one of my favorite things to eat is a salad made with cucumbers and tomatoes like this one. Make sure to use the best tomatoes you can get your hands on, and try to incorporate a few different kinds if at all possible.

The ideal version of this salad is made with tomatoes that range in size, shape, and color all within the same dish.

Ingredients

  • 2 Persian cucumbers
  • 3 cups cherry tomatoes
  • 6 to 8 ounces of halloumi cheese
  • Extra-virgin olive oil
  • Scant ¼ cup thinly sliced red onion
  • Homemade Croutons (grilled option), from 2 large slices of bread
  • Greek Salad Dressing
  • ⅓ cup fresh basil
  • Flaky sea salt, optional

  1. Cucumbers should be sliced very thinly, while tomatoes should be cut in half before being set away.
    Halloumi should be sliced into planks that are about half an inch thick. Olive oil should be rubbed on both sides of the meat before it is placed on the grill for two to three minutes on each side. After removing the planks from the grill, cut them into bite-sized pieces.
  2. Prepare the salad by combining the sliced cucumbers, tomatoes, halloumi, red onions, and croutons in the appropriate proportions. To finish, drizzle with the dressing and sprinkle with the fresh basil. Depending on your preference, season to taste with flaky sea salt.
