Tomatoes that have been grilled are wonderfully delicious and ready in a flash!

This is a wonderful way to take advantage of the abundance of fresh summer Broiled Tomatoes, and they go well as a side dish or even for lunch on toast!

Only a few items are required to make the flavorful broiled tomatoes.

Ripe commercial tomatoes also work in this dish, but fresh garden or farmer’s market tomatoes are fantastic.

The tomatoes ought to be ripe but just barely firm.

TOPPING

For a delicious flavor, fresh garlic and herbs are brushed. We sprinkle Parmesan cheese and shredded mozzarella over these.

If you have fresh herbs, add them after cooking (parsley and basil are favorites).

EXTRAS

These are also fantastic with a splash of balsamic vinegar reduction!

How to Broil Them

The ideal juicy appetizer, grilled tomatoes are ready in a matter of minutes!

  1. tomato slices.
  2. Tomatoes should be brushed with oil, garlic, and seasonings on both sides (per recipe below).
  3. Each tomato should have cheese on top before being broiled.

Tips

  • Tomatoes should be ripe but not mushy.
  • To prevent the tomatoes from becoming mushy as the cheese melts and bubbles, cut the slices fairly thick.
  • Shred your own cheeses; pre-shredded cheeses don’t melt as well and contain additives to prevent clumping.
  • The ideal time to add fresh herbs is after cooking.

These cheesy, delicious broiled tomatoes may be made in only 10 minutes.

Ingredients

  • 1 pound of large ripe tomatoes at room temperature
  • 1 tablespoon olive oil
  • 3 ounces of mozzarella cheese
  • 1 clove garlic minced
  • A teaspoon Italian seasoning
  • 1-ounce parmesan cheese

  1. Tomatoes are sliced 1/4″ thick.
  2. Italian spice, garlic, and olive oil should be combined. Place the tomatoes on a baking sheet and then brush both sides.
  3. Put cheeses on top.
  4. Place oven rack on top rack and heat broiler to 500 degrees Fahrenheit.
  5. Tomatoes should only be broiled for 2–3 minutes, or until cheese is browned and bubbling.
