Hearty buttered bread packed with hot baby arugula, fresh, sweet lobster meat, and shredded cheese.

The most basic yet extraordinary grilled cheese sandwich is this one. My friends, this grilled cheese is not for the little ones.

On my list of simple comfort meals, Lobster grilled cheese comes in first. Also you? And although a plain grilled cheese with no extras is tasty and makes me think of my childhood, these days I like to dress up my sandwiches.

So why not make that cheesy delight even better by adding some luxury and sea-freshness? Are you on my side?

This grilled cheese is elevated by the addition of lobster(Lobster grilled cheese). The young arugula offers a peppery edge and assists in bringing the lobster and cheese’s richness into balance.

Oh, and if you’ve ever heard that cheese and shellfish don’t mix, forget it; it’s just not true. The pudding is the proof. In the grilled cheese, specifically.

There isn’t a recipe needed for this lobster grilled. What you’re doing is as follows:

  • Grab two slices of your preferred bread (we used a cheesy sourdough)
  • Butter one side of each slice of bread.
  • One slice of bread should be added to a saute pan over medium heat.
  • Add the lobster, arugula, cheddar, and pepper in layers.
  • Add the final bread slice on top, butter side up.
  • Heat for a few minutes, flipping after a few until cheese is melted, bread is gently toasted, and lobster is heated through.
  • Cut in half, then eat!

Observations regarding this grilled cheese:

  • If you don’t like Lobster grilled cheese (what the heck?! ), you can substitute cooked shrimp.
  • Use a high-quality cheddar because cheese is crucial (we love Cabot)
  • The bread is crucial as well, so choose a high-quality bakery variety.
  • Any baby green can be used in place of the baby arugula.
  • For this grilled cheese, I highly suggest using cooked lobster flesh (you may also use thawed frozen meat). One would think that no one would want to steam a lobster only to create a cheese sandwich.
