Any day of the week is a great day to serve Herb Baked Salmon. It only takes a few minutes to prepare tender, flaky salmon with a lemony herb crust, which cooks in under 30 minutes.

Baked Salmon that is both simple to prepare for a family meal and elegant enough to offer to guests!

For a quick lunch, we offer this straightforward salmon recipe along with our favorite baked zucchini and a healthy side salad.

Salmon is not only my husband’s absolute favorite food but also my daughter Maddy’s. Since I don’t make this particular dish frequently, it is always a delight when we do!

You might be surprised to find that even though I don’t consume a lot of salmon, I adore catching it!

Although I haven’t gone salmon fishing in literally years, we recently went on a Princess Cruises Alaskan cruise, and salmon fishing was one of our excursions!

Salmon fishing was the beach excursion I was most looking forward to, although I also absolutely LOVED the Glacier Point Wilderness Tour in Skagway; more on that will be coming soon on Princess.

While we were salmon fishing, the weather was perfect—it was so warm that most of the people on our boat were wearing t-shirts! It was a gorgeous sunny day! We went fishing, and I have to say, it was one of the most breathtaking sites I’ve ever seen.

Amazingly breathtaking Mountains covered in snow, and abundant wildlife, including eagles, sea otters, and many whales.

Although I didn’t catch any salmon that day, I was the first person on our boat to catch anything (a small flounder), so even though we didn’t retain it, I was fairly happy about it!

Although this time I didn’t catch my fish, there was no shortage of wonderful seafood on the cruise ship! I was motivated to cook some fantastic seafood in my kitchen because the food on the ship was extremely amazing in every single restaurant!

On the trip, I was eager to recreate a great fish dish with a hazelnut and panko crust that we had eaten. We omitted the hazelnuts from this baked salmon dish because my kid is allergic to nuts, and instead we increased the number of breadcrumbs! This salmon recipe includes fresh garlic, but the crust is very similar to that of my baked tilapia recipe or that of herb-crusted pork tenderloin.

Salmon is so easy to prepare in the oven or on the grill, and not only is it delicious, but it cooks up so quickly. Salmon that is flaky and tender with a lemony, garlicky, and herb crumb crust.

If you want to make a complete supper, add some zucchini, asparagus, bell peppers, or broccoli to the skillet with the salmon along with some olive oil and spices.

By the time your salmon is baked, the vegetables will be nicely done. One pan, one dinner, essentially no dishes to wash. In my opinion, that is a victory!

Salmon in the Oven: Cooking Instructions

Since salmon is lean, when cooked, it should be soft and flaky. It can turn dry and unpleasant if you cook something for too long.

This baked salmon cooks quickly and requires only a brief amount of preparation time, making it the perfect meal.

  1. Spray foil, or parchment paper, or use both to line a pan.
  2. Put the salmon fillet on the pan with the skin side down if it has any.
  3. Using butter, season the surface.
  4. Toppings, flavors, or herbs can be added. Bake.

How long should you bake fish for?

The process of baking fish in the oven doesn’t take very long. I like to cook salmon in the oven at a higher temperature for a shorter amount of time (about 400 degrees for 16 to 17 minutes), but it’s completely up to you based on your preferences and time constraints.

A 3–4-pound salmon filet will cook at:

  • for 10–12 minutes at 425 °F
  • for 13–17 minutes at 400°F
  • 18–22 minutes at 375°F
  • 25 to 30 minutes at 350°F

Remember that a thicker piece of salmon will take longer to cook and a thinner piece will finish cooking more quickly. An internal temperature of 145°F is advised by the FDA.

Ingredients

  • 1 salmon fillet 3-4 pounds
  • 2 tablespoons butter melted
  • 1 lemon divided use
  • salt & pepper

topping

  • ¾ cup Panko bread crumbs
  • 3 cloves garlic minced
  • 2 tablespoons fresh parsley minced
  • 1 tablespoon fresh dill minced
  • zest from one lemon
  • 2 tablespoons parmesan cheese shredded
  • 3 tablespoons butter melted

  1. Set the oven to 400 °F.
  2. In a tiny bowl, mix all the ingredients.
  3. Spray cooking spray on the foil you’re using to line the pan.
  4. Brush melted butter over the salmon as it is placed in the pan. Add salt and pepper, then squeeze 12 of the lemon over the dish.
  5. Over the salmon, scatter the crumb mixture. Bake salmon uncovered for 13–17 minutes, or until it flakes easily.

Notes

Depending on the thickness, the cooking time for salmon will change. According to the FDA, your salmon should reach an internal temperature of 145°F and easily flake with a fork.
