This meal, which resembles a Caprese salad, is popular for lunch or as a side dish with steak for the evening.

Tomatoes: Fresh, diced tomatoes are preferred, although any type, variety, or color of tomato will do. Every time, create a different salad by varying the sizes and colors of the tomatoes!

Fresh mozzarella has a buttery, creamy flavor and is exceptionally moist and soft. In this dish, boconcini (or mozzarella) balls are the greatest option. Reduce their size by cubing or halving it.

Dressing – A basic vinaigrette dressing can be made with only a few items from your cupboard. Dijon mustard, balsamic vinegar, and some seasonings! If you’d like, drizzle some balsamic glaze over the dish.

The entire dressing may not be necessary. For up to three days in the fridge, store it in a mason jar or cruet.

How to Make a Salad with Tomatoes and Mozzarella

  1. Chop or slice the tomatoes.
  2. Shake the dressing ingredients together in a container with a secure lid. Keep chilled until you’re ready to use.
  3. Put all the ingredients for the salad in a big bowl. Use just enough dressing to cover a salad after shaking it.
  4. Add a side of garlic bread, handmade croutons, or fresh basil leaves as a garnish.

Variations

  • Replace the mozzarella with crumbled feta, shaved parmesan, or bleu cheese.
  • You can also add sliced Kalamata olives, cucumber, peas, avocado, and even nuts.
  • Add a tablespoon or two of prepared pesto to the dressing (or, if you have any on hand, a balsamic vinaigrette)!

Leftovers?

  • Keep the dressing fresh if you intend to have leftovers so that the lettuce stays crisp.
  • For up to three days, keep leftover tomato mozzarella salad in the fridge in a covered container. If necessary, drain and add new romaine lettuce.

  • 1 large tomato diced
  • 2 cups cherry or grape tomatoes or 2 large ripe tomatoes
  • ¼ red onion thinly sliced
  • 8 ounces fresh mozzarella cheese diced
  • 3 tablespoons torn fresh basil leaves optional
  • balsamic glaze for drizzling optional

  • ½ cup olive oil
  • ¼ cup balsamic vinegar
  • 1 teaspoon sugar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • salt and pepper

  1. Cut grape or cherry tomatoes in half if you’re using them. Cut larger tomatoes into bite-sized pieces if you’re using them.
  2. In a container, combine all the dressing ingredients. Shake vigorously and reserve.
  3. In a large salad bowl, combine all the ingredients. Shake the dressing again if it separates, then combines with the salad.
  4. If using, drizzle with balsamic glaze. Fresh basil leaves are a nice garnish.

Notes

  • For this salad, you might not use all of the dressing. For up to 3 days, keep any leftover dressing in the refrigerator.
  • It is possible to prepare ingredients in advance and dress them right before serving.
