For day two, a pizza with Mediterranean influences. Baby greens, mushrooms, olives, lovely golden tomatoes, herbs, and some almond feta are placed on top of a thin Spelt crust.

The Vegan Mediterranean Pizza that so many bloggers are bringing to Mofo is beyond belief. Watch the VeganMofo Page for entertaining freebies and highlights. Every week, I’ll probably compile a list of some of my favorites.

For this pizza, I created Ricki’s Almond Feta with parsley and thyme. I soaked almonds that were uncooked for the entire night.

I peeled some of them and left some of them unpeeled (I am so lazy ;), which is why my cheese has brown flakes. It does taste fantastic with all the herbs and the additional sourness. But it’s not quite a feta.

Crusty I made filled with savory french toast with some of the feta and used some on the pizza. In the morning, the toasts were a resounding success.

The recipe for the Samosa savory toasts is provided below. Instead of using potato filling, sandwich some feta between 2 slices, then dip them in the flavorful batter and pan fry them. noun Nom

Steps for making pizza:

  1. In a bowl, combine warm water, sugar, and yeast. Let stand until foamy (10 minutes)
  2. Add the salt, EVOO, herbs, and flour.
  3. Spray water on top, mix and knead for a minute, then cover with a damp cloth.
  4. Permit to rise for 1.5 hours. Watch some music, and take the dog for a stroll. Make more pizzas, clean the kitchen, set up props, and rage at the purchasers of the house you like whose offer is too high.
  5. The dough should be gathered and kneaded for 3–4 minutes using some spelled flour and lubricated hands.
  6. On paper, roll out this dough as thinly as you can.
  7. Add EVOO using a brush. Arrange the mushrooms, olives, golden cherry tomatoes, and baby greens. liberally sprinkle feta.
  8. Sprinkle the spices on top and bake for 12–13 minutes at 410°F.
  9. Broil for 30 seconds on low.
  10. Remove, sprinkle with chopped basil and fresh baby greens, then slice and serve.

I modified Ricki’s almond feta recipe by including thyme and parsley. Instead of using blanched almonds, I soaked them all night in raw almonds.

Mediterranean Pizza

This pizza is delicious with almond feta, mushrooms, greens, olives, and golden cherry tomatoes. Soy-free vegan recipe

Ingredients

Crust

  • 1/4 cup (62.5 ml) warm water
  • 1 teaspoon active yeast
  • 2 teaspoons raw sugar
  • 1/3 cup (40 g) Spelt flour
  • 2 Tablespoons bread flour
  • 1/4 teaspoon (0.25 teaspoon) salt
  • a generous pinch of garlic powder, dried parsley, dried basil, and paprika
  • 1 Tablespoon EVOO extra virgin olive oil
  • 2-3 tablespoons (2 tablespoons) spelled flour to work the dough

Toppings

  • 1 Tablespoon EVOO
  • 1 recipe Ricki’s Almond feta
  • baby kale and spinach
  • sliced mushrooms
  • kalamata olives
  • golden cherry tomatoes halved
  • 1 teaspoon parsley
  • 1/4 teaspoon (0.25 teaspoon) cumin powder
  • black pepper to taste Or use a light sprinkle of the dukkah spice blend

  2. Add the salt, EVOO, herbs, and flour.
  3. Spray water on top, mix and knead for a minute, then cover with a damp cloth.
  4. Permit to rise for 1.5 hours.
  5. The dough should be gathered and kneaded for 3–4 minutes using some spelled flour and lubricated hands.
  6. On paper, roll out this dough as thinly as you can.
  7. Add EVOO using a brush.
  8. Arrange the mushrooms, olives, golden cherry tomatoes, and baby greens.
  9. Liberally sprinkle feta.
  10. Sprinkle the spices on top and bake for 12–13 minutes at 410°F/210°C.
  11. For 30 seconds, slowly broil the food.
  12. After removing from the oven, garnish with chopped basil and new baby greens, then cut and serve.
