It’s SO simple to make these delicious date balls! What you must do is as follows:

Check the dates first. They ought to be pliable, sticky, and soft. Spend 10 minutes soaking them in hot water if they feel dry or stiff.

Next, combine the ingredients by pulsing them. Put the soft, pitted dates, oat flour, almond butter, walnuts, vanilla, water, and salt in a food processor. The mixture should stick together when pinched after a few pulses.

  • 1 cup walnuts
  • 1/3 cup well-stirred creamy natural almond butter*
  • 10 soft Medjool dates**
  • 1 teaspoon vanilla extract
  • 2 tablespoons water
  • 1/2 teaspoon sea salt
  • 1/2 cup mini chocolate chips

  1. Combine oat flour, walnuts, almond butter, dates, vanilla, water, and salt in a food processor. The mixture should stick together when pinched after a few pulses. If it’s too crumbly, add a spoonful at a time add water, and pulse.
  2. Add the chocolate chips after transferring the batter to a bowl. Scoop and roll into balls using a cookie scoop with a 2-tablespoon capacity.
  3. Refrigerate any additional balls. They freeze well as well. Leave them at room temperature until they are soft to defrost.

NOTES

**To create this recipe, look for creamy almond butter with a smooth consistency rather than the hard, dry stuff you can find at the bottom of a jar.

If your dates are tough, give them a 10-minute soak in hot water.
