HAM CHOPS You want a nice thick chop for this recipe, with fat marbled throughout; my personal preference is to use pork steaks. The pork chops will dry out if they are overly lean.

BREADING A delicious panko bread crumb mixture is used to coat the pork chops. Before being placed in the pan, the coating is lightly browned. Although the sauce does cause the crust to soften, it is still very tasty.

ANY KIND OF FRESH MUSHROOMS WILL DO For outstanding flavor, I most frequently combine white and cremini mushrooms.

  • Before sautéing, evenly press the breading into the chops on both sides. While baking, the breading will keep the meat tender.
  • You can make homemade mushroom soup in its place, or you can top this casserole with your preferred creamy mushroom sauce.
  • Pork that is tough probably needs MORE time. Recover it and place it in the oven; check it after 20 or so minutes.

Ingredients

  • 2 pounds thick pork chops* or pork steaks
  • salt & pepper to taste
  • ⅔ cup panko bread crumbs
  • ⅔ cup seasoned bread crumbs
  • 2 tablespoons fresh parsley divided
  • 1 teaspoon garlic powder
  • 2 eggs beaten
  • 1 tablespoon oil or more, for browning
  • 8 ounces mushrooms
  • 2 cans condensed mushroom soup 10.5 oz each

Instructions

  1. Set the oven to 350°F.
  2. Look for any bone or debris in the pork chops. Add pepper and salt to taste.
  3. Combine 1 1/2 teaspoons of parsley, panko bread crumbs, seasoned bread crumbs, and garlic powder.
  4. Pork chops are dipped in beaten eggs, then bread crumbs.
  5. Pork chops are added to a hot big skillet with 1 tablespoon of oil. About 3 minutes per side is needed to brown both sides. Repeat the process with the remaining pork chops, adding additional oil as necessary.
  6. Pork chops should be put in a big baking pan. Add mushroom soup and thinly sliced mushrooms on top. Wrap with foil.
  7. Pull back the corner and examine one of the pork chops after baking for 1 1/2 to 2 hours. It ought to be knife-tender. If not, bake for another 20 to 30 minutes.
  8. Serve the mashed potatoes with a parsley garnish.

Notes

Use pork steaks, sirloin chops, shoulder chops, or blade chops.

Lean pork chops won’t work well in this recipe; for the best results, look for something marbled with a little more fat.
