One of the most popular summer salads at picnics, cookouts, and office potlucks is a traditional chicken salad recipe! A cold, creamy salad or the filling for a homemade salad sandwich or wrap can be produced with only a few ingredients!

When last-minute invitations arise, keep this simple recipe of chicken salad on hand for last-minute sandwich preparation! Serve this summer with grilled corn on the cob and a side of Italian pasta salad!

Chicken Salad Ingredients:

Chicken

  1. Utilize leftovers from dinner the previous night, rotisserie chicken, or grilled chicken.
  2. I prefer to use baked chicken breasts or thighs or poached chicken breasts when making chicken salad.
  3. Even though canned chicken can be used in an emergency, fresh chicken is always preferred.
  4. As soon as the chicken has cooled, slice or shred it into bite-sized pieces.

Add-ins:

  1. Since this is a traditional chicken salad recipe, I didn’t add a lot to it. Green onions for flavor and celery for crunch.
  2. For more flavor and texture, this recipe can be done using a variety of nuts, vegetables, and fruits.
  3. A favorite is a salad with grapes, avocado, or dried cranberries. This dish goes great with pecans or almonds.

Dressing:

  1. This dish starts with mayonnaise, which is then lightly seasoned.
  2. Using your imagination, you can replace some of the mayo with ranch dressing or your own salad dressing recipe.
  3. Use mashed avocado in place of some of the mayonnaise to make an avocado salad.

How do you prepare chicken salad?

With just a few basic ingredients, you can make a traditional salad in 15 minutes.

  1. Chop cooked chicken, allow to cool, then add to a big bowl with celery and onions.
  2. In a bowl, combine the dressing ingredients according to the recipe below. Stir in the chicken.
  3. Serve with bread, buns, or a bed of lettuce.

Any bread will work for this salad sandwich recipe; thick baguette pieces or buns/rolls hold up well. This is wonderful over a tossed salad and is naturally low in carbs.

REFRIGERATOR:

The salad keeps for about a week when stored in an airtight container. Stir it up, add some additional Dijon mustard or salt and pepper to freshen the flavor, and then serve!

FREEZER.

Salad doesn’t freeze well, according to a FREEZER. Simply dice the chicken and freeze it to prepare in advance. When prepared, combine it with the following items to make a quick lunch!

Ingredients

  • 2 cups cooked chicken chopped
  • ½ cup mayonnaise
  • 1 stalk celery chopped
  • 1 green onion diced (or chives or red onion)
  • 1 teaspoon Dijon mustard
  • ½ teaspoon seasoned salt
  • pepper to taste
  • 1 teaspoon fresh dill optional

Instructions

  1. In a small bowl, combine all the ingredients and stir thoroughly.
  2. To taste, add salt and pepper to the food.
  3. Serve over salad or as a sandwich.
