STRONG FLAVORS We adore salami, but if you prefer something with less salt, try pastrami, prosciutto, ham, or pepperoni. Other preferred ingredients include artichokes, sun-dried tomatoes, and olives.

CHEESE Since we use tortellini that have cheese inside, we only add a little parmesan for flavor.

DRESSING Use premade Italian dressing or prepare your homemade Italian dressing to keep things simple.

Ingredient

  • 16 ounces of cheese tortellini
  • 1 cup Italian dressing homemade or store-bought
  • 1 cup cherry tomatoes halved
  • ¾ cup salami diced
  •  cup red onion diced
  • ½ red pepper diced
  • ½ green pepper diced
  • 2 tablespoons parmesan cheese shredded
  • 1 tablespoon parsley

Instructions

  1. Tortellini should be cooked by the instructions on the package in a medium pot of boiling water.
  2. By running under cold water, fully cool.
  3. Before serving, combine all the ingredients and chill for two hours.

Notes

Additions are optional:

  • 1 cup drained marinated artichoke hearts
  • pitted olives in a half-cup
  • Sundried tomatoes, half a cup

In this dish, bell peppers of any hue will work. While you prepare the other ingredients, soak the onion in cold water if it is particularly strong.

Avoid overcooking pasta. Start the pasta in advance to save time, and cut the other items as the pasta cooks.

As the spaghetti chills, the dressing will absorb into the noodles, so use plenty.
