A Simple Side Dish
We enjoy making tomatoes shine since they make for a simple side dish. They are flavorful, nutritious, and fresh. The options are unlimited, from grilled tomatoes to tomato pie to pico de gallo to tomato soup!
In this dish, any fresh tomato will work well, but the juicier the better. Also excellent are cherry and Roma tomatoes. The sweet-tart flavor of the tomatoes pairs nicely with the balsamic vinegar, olive oil, basil, and parmesan cheese.
Tomato sauce, roasted tomato soup, and marinara sauce all benefit from using roasted tomatoes as their foundation. They taste great on pizza, mixed with pasta (no additional sauce needed), and even by themselves!
Roasted TomatoesTechniques
Simply chopping and seasoning tomatoes is all that is required to make them roasted. I like to use a lot of fresh herbs and garlic, although dried herbs also work.
Roasting tomatoes involves:
- To halve the tomatoes, wash them.
- With the remaining ingredients, toss.
- Roast when placed in a single layer in a baking dish or on a baking sheet.
They are that simple!
How long should tomatoes roast?
I’ve seen various recipes that call for roasting tomatoes for 40 to 60 minutes, but I find that by that time they’re frequently mushy and resemble tomato sauce.
Tomatoes are a speedy side dish because they only take 15-20 minutes to prepare!
For this recipe for tomatoes, I use any kind that is juicy and ripe. It could take a little bit longer to cook a large, substantial, or firm tomato (like a beefsteak).
It may take closer to 10-15 minutes for a tomato that is more sensitive (such as cherry or Campari tomato). Of course, you can cook them longer if you like them softer. Depending on their size, tomatoes will need to simmer at varying times.
Cherry Roasted Tomatoes Techniques
You may apply the same technique to roast cherry tomatoes. They should be washed and cut in half before being mixed with other ingredients and placed on a baking sheet.
Just be sure to watch them closely because cherry tomatoes will cook a little quicker than larger tomatoes will.
Tomato Storage Techniques
These tomatoes keep for 4-5 days in the refrigerator, just like Parmesan Oven Baked Tomatoes. Adding any leftover tomatoes to soups, chili, stews, or pasta sauce is a terrific idea.
Although the texture of the tomatoes may alter, these can be frozen even though they don’t store well as a side dish. To replace canned diced tomatoes in all of your favorite recipes, chop and freeze the tomatoes.
Ingredients for Roasted Tomatoes
- 2-3 pounds of tomatoes
- 1 tablespoon olive oil
- ½ tablespoon balsamic vinegar
- 1 clove garlic minced
- 1 tablespoon fresh chopped basil or ½ teaspoon dry basil
- 2 tablespoons shredded parmesan cheese optional
- salt and pepper to taste
Instructions
- set the oven to 450 degrees.
- Tomatoes should be washed before cutting them in half or, if they are large, into quarters.
- Toss the remaining ingredients with the tomatoes.
- Put in a dish or baking pan with a rim. 10 to 20 minutes, or desired doneness, roast
Notes
While ripe little tomatoes, like Campari, only require around 10 minutes, larger or tougher tomatoes, like Romas, will require more time (nearly 20 minutes). Tomatoes that have been cooked can be left out and served hot or at room temperature.
