INGREDIENTS
For The Base:
- 1 cup graham cracker crumbs
- 1/4 cup butter, melted
- 1 tablespoon granulated sugar (or natural sweetener)
For The Filling:
- 1 x 8 oz | 250 g block cream cheese, softened
- 1/2 cup thickened (or heavy) cream
- 1/2 cup plain Greek yogurt
- 4 tablespoons granulated sugar (or natural sweetener)
- 1 teaspoon pure vanilla extract
- 8 oz | 230g sliced pineapple (tinned or fresh — about 4 slices), crushed or finely diced
- Extra pineapple slices, to garnish
- Maraschino Cherries, to garnish
INSTRUCTIONS
- Melted butter, sugar, and graham cracker crumbs should be combined (or sweetened). Place aside.
- Cream cheese, cream, and sugar (or sweetener) should be combined in a larger bowl and mixed thoroughly using an electric mixer set to medium-high speed.
Yogurt, pineapple, and vanilla are added and thoroughly combined. - In four separate serving glasses, distribute the biscuit mixture and press a small amount into the bottom of each glass.
- Repeat the process with the cream cheese mixture; cover and chill in the fridge for 15–30 minutes.
- Add more pineapple to the dish as a garnish, and place a maraschino cherry in the middle of the pineapple ring.
