Cabbage soup has a lot of flavors and few calories. A soup made with chopped cabbage and a few basic ingredients simmers while tasting wonderful and healthful.

It is wholesome, easy to make, and delicious, and it is packed with goodness. This soup works well as a starter, side dish, light lunch or dinner, or as a starter.

This nutritious soup is a go-to for vegetarians and even dieters. Other names for it include veggie soup, WW soup, and zero point soup. It’s wonderful that you may include your own favorite vegetables and seasonings.

Cabbage

A simple, affordable, and calorie-efficient vegetable is cabbage. It gives this soup a ton of volume. To make it even quicker, you may switch out a bag of shredded coleslaw in place of the 1′′ pieces I use (reduce cooking time for coleslaw).

Broth

Although we find that beef broth has the best flavor, you may also use chicken or vegetable broth, exactly like in our veggie soup for weight reduction. The diced tomatoes (with liquids) and some basic seasonings give the dish a tangy flavor.

Vegetables

There aren’t many ingredients in this recipe because it’s meant to be quick, but you can substitute nearly any vegetable you choose. Cauliflower, celery, and chopped turnips are some of my personal faves because I typically like this as a lower-carb choice.

Recipe for Cabbage Soup

  1. In olive oil, saute onion (or bacon grease if you have it.) Cook the cabbage according to the recipe below.
  2. Once the cabbage is soft, add the remaining ingredients and simmer.
  3. Remove and discard the bay leaf.

Consider adding some sour cream, parmesan, or fresh herbs to the top of each serving.

Additional Soup Ingredients

You can add nearly anything to this recipe for soup to make it a terrific base for dinners.

  • Cubed potatoes, cauliflower rice, celery, broccoli, and tomato sauce are among the vegetables.
  • Browned ground turkey or lean Italian sausage, or small meatballs, are other protein options. Add a can of kidney beans that have been drained for some fiber.
  • Add couscous, rice, quinoa, or whole wheat pasta to your grain dish.
  • A squeeze of fresh lemon juice, some fresh garlic, and fresh herbs like basil, oregano, parsley, or thyme to the dish as seasonings.

Is Cabbage Soup Freezer Friendly?

This simple soup is no different from the majority of non-dairy-based soups and stews in that it can be frozen.

Once it has cooled, pour it into zipped freezer bags or an airtight container and label it with the date to freeze. For roughly two months in the freezer, it will remain fresh. (Keeping it longer can cause the flavor to fade.)

Allow it to thaw at room temperature before reheating in the microwave or a pot on the stove.

For added color, you can either add more diced tomatoes, or you can completely redo it by adding diced bell peppers, green beans, or canned corn that has been drained. Allow your creativity to soar!

Ingredients

  • 2 teaspoons olive oil
  • ½ onion diced
  • 6 cups cabbage
  • 1 bay leaf
  • 14 ounces diced tomatoes with juice
  • 1 carrot shredded
  • 1 tablespoon tomato paste
  • 6 cups beef broth or chicken broth
  • 1 tablespoon parsley fresh
  • 1 teaspoon Italian seasoning

  1. 3–4 minutes should be plenty to cook onion until it is soft.
  2. Slice the cabbage into 12″ sections while the onion is cooking. Cook the cabbage in the pot for about 8 minutes, or until it begins to soften, over medium heat.
  3. Other ingredients can be prepared while the cabbage is cooking. Combine all ingredients in a pot, bring to a boil, and then simmer for 15 minutes with the lid off, or until the cabbage is soft.
  4. Remove the bay leaf, add salt and pepper to taste, and then serve.

Notes

Soup leftovers can be kept in the refrigerator for up to 4 days.

For up to two months, freeze portions of chilled soup.

Reheat in a pot on the stovetop or the microwave.
