In a medium-sized ceramic bowl that fits into the Instant Pot, place the shrimp. Place the trivet on top of the chicken stock in the Instant Pot, then add the bowl of shrimp on top.

After that, add the butter and the garlic.

Low-pressure seal and cook, then rapid release. Remove the bowl from the Instant Pot with care and season the shrimp with salt.

Chef’s Advice

  • Don’t use salt to cook the shrimp! After cooking, season the shrimp with salt to keep them soft.
    If the shrimp are overcrowded in the Instant Pot, they will not cook evenly.
  • Cocktail sauce is a classic dipping sauce, but try spicy mayo, comeback sauce, peanut sauce, or tartar sauce with these shrimp.
  • Although pre-peeled and deveined shrimp is more convenient, you can save money by purchasing shrimp with the shells still on. Begin peeling a shrimp from the bottom up (where the legs are). You can keep the tail or remove it for aesthetic purposes. Make a shallow cut in the shrimp over the black vein to devein it. Remove the vein with your knife and discard it gently.

  1. In an Instant Pot, place the shrimp in a medium ceramic bowl. Place a trivet over the saucepan of chicken stock, then a bowl of shrimp on top. After that, add the garlic and butter.
  2. Seal and cook under low pressure for 1 minute, then fast release. Remove the bowl from the Instant Pot with caution and season the shrimp with salt.

Notes

  • Salt should be added after the food has been cooked, not before. If you cook shrimp with salt, they will not be soft.
