This creamy, oozy vegan cheese sauce rivals the authentic version in taste. It’s tasty on spaghetti, nachos, and more, and it’s versatile and simple to create.

This recipe for vegan cheese won’t just appeal to vegans! It has the same rich, creamy, tangy, and oozy texture as cheese sauce made from dairy products.

The last time I prepared it, we scooped it up with tortilla chips while seated at the counter. We only finished the first batch of cookies halfway before deciding to make more. It is that wonderful!

Serve this cheese as a dip with tortilla chips or fresh vegetables. You can also use it to make vegan mac and cheese, top baked potatoes with it, or create a vegan nacho platter by drizzling it over chips.

This dairy-free cheese is not only tasty, but it’s also healthy.

It is made of a small number of natural foods, as opposed to manufactured cheese that you might get in grocery shops. What you will need to make it is as follows:

  • Yukon gold potatoes and cashews are essential ingredients for creating this recipe with an oozy, creamy feel.
  • Sweet potatoes are an essential component of every cheddar-style cheese sauce. The sweet potato gives this dish its vivid color and provides a subtle sweetness that pairs perfectly with hearty, acidic tastes.
  • Nutritional yeast – It gives our dairy-free cheese the nutty, savory flavor of the genuine article!
  • They provide a great depth of flavor.
  • This cheese has a bright, tangy flavor thanks to apple cider vinegar. Yum!

Boiling the potatoes is the first step in making this cashew cheese dish. Transfer them to a high-speed blender after they are soft.

Add water, extra virgin olive oil, a dash of salt, nutritional yeast, garlic, onion powder, cashews, and vinegar. Adding additional liquid as necessary, blend the mixture until it is entirely creamy and liquid-free. then have fun!

TOP VEGAN CHEESE ALTERNATIVES

Even while I adore this dish exactly as described, I occasionally want to make changes. Here are some of my preferred modifications:

  • Replace the vegetables. Replace sweet potatoes with carrots or butternut squash if you don’t have any on hand.
  • Add some smoke. To taste, add 1/4 to 1/2 teaspoon of smoked paprika. This variant is my favorite to serve as a loaded queso dip with guacamole, pico de gallo, and black beans!
  • Enhance it. Add one chipotle pepper from a can of chipotles in adobo or a tablespoon of pickled jalapenos to the cheese for more spiciness.

The BEST cheese recipe! It tastes cheesy and has a deliciously oozy texture. I like to serve it as a dip, combine it with spaghetti, or drizzle it over nachos. Gluten-free.

INGREDIENTS

  • 3/4 cup peeled and diced Yukon gold potato and sweet potato
  • 2 garlic cloves
  • 1/4 cup raw cashews
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/4 cup extra virgin olive oil
  • 1/4 cup water

TO MAKE YOUR CHEESE SPICY OR SMOKEY, TRY ADDING:

  • 1/2 to 1 chipotle pepper from canned chipotles in adobo
  • 1 tablespoon pickled jalapeños
  • 1/4 to 1/2 teaspoon smoked paprika

  1. Put the potatoes in a saucepan and add only 1 inch of cold water on top of them. Add a few salt shakers. Bring to a boil, then lower the heat and simmer, uncovered, for 8 to 12 minutes, or until fork-tender.
  2. Drain and add the garlic, cashews, apple cider vinegar, nutritional yeast, onion powder, salt, olive oil, and water to a high-speed blender. Until smooth, blend.
  3. Add the chipotle pepper or pickled jalapenos for spicy vegan cheese. Add the smoked paprika for a smokey flavor.
  4. Serve vegan mac & cheese over spaghetti or with tortilla chips for dipping.

NOTES

There is no need to soak the cashews if you’re using a high-power blender, such as Vitamix. You can soak them for two hours if your blender is weaker. Before adding to the recipe, drain.
